Some think they have a slight seafood taste; others a slightly anise flavor. They have a tender, delicate, slightly meaty chewy texture that holds up well in cooking. Not recommended raw. They can be prepared in a variety of ways, each with its own unique personality. The caps deep blue color when young fades to gray as they mature. Loaded with fiber and low carbs they have wonderful vitamins and minerals.
